Promoting Healthy Eating Behaviors Among College Students

Obesity is a pressing public health issue that disproportionally affects ethnicities such as s in the United States. According to current literature, a plant-based diet has many health benefits including reduced risk for cardiovascular disease and diabetes. At the same time, it offers a plethora of nutrients that have been correlated with improved health outcomes including weight loss and cholesterol control. In Los Angeles, a predominantly Hispanic city, there is a need to provide nutrition education that is culturally sensitive. In order to address obesity prevention, the Marilyn Magaram Center offers nutrition education to parents at public elementary schools. By incorporating culturally appropriate plant-based recipes, nutrition educators can enhance the nutrition of this at-risk population in order to prevent obesity among Hispanics in Los Angeles.
